While growing up, one of the things to look forward in summer vacations in India was the mango season. My breakfast, lunch, snack, dinner all consisted of sweet and cool mangoes. Mango recipes are incorporated in various dishes like sweet and savory Mango Kadi, Kulfi, Shrikhand, Icecream, Lassi, Salads, Kheer, etc. With summer right around the corner, this Mango Kofta curry would be a refreshing dish to try. A twist to the Malai Kofta curry recipe, this is another rich contribution from my cousin, Shilpa Balwani.

Ingredients: (Makes 8 kofta)
For Mango cream kofta:
For outer layer:
4 medium-sized Potatoes, boiled
4 Tbsp. Cornstarch
Salt to taste
For filling: (You can change the proportions the ingredients to your liking)
1/2 cup ripe Mango, finely chopped
10-15 Raisins
10 roasted Cashews, roughly chopped
Roughly 2 Tbsp. Mayonnaise to bind them all together
Oil for frying
Method:
1) Mash the boiled potatoes. Add cornstarch and salt and form a sort of dough. Set it aside
2) Mix all the ingredients for filling. You can alter the quantity of mayo to your liking.
3) Divide the potato dough in 8 equal parts
4) Make small flat thick round roti out of one of the dough and put a little stuffing in the center of the roti
5) Pull together the edges of the roti and close and roll it in the shape of ball
6) Repeat the step 4 and 5 for the rest of the dough
7) Fry one kofta in hot oil to make sure, it doesn't fall apart while frying. If the kofta come apart while frying, that means the cornstarch is less, roll the rest of the kofta in cornstarch and it should be fine then. Fry them till golden brown like the ones shown in the picture above.
8) To save some calories, you can also shallow fry the kofta on low flame. The difference would be the shape, it would be flat like a patty. That kind is also shown in the picture.
