Guacamole

Avocadoes are a regular buy for us majorly for one thing: Guacamole. I love the texture and the flavor. There really isn't much to say about this Mexican dip that is commonly served as an appetizer with chips and as one of the condiments in Mexican restaurants. Just Enjoy!

Serves: 6
Prep Time: 15-20 min
Difficulty level: Easy

Ingredients:

3 large Avocadoes, ripe and soft
2 nos. Spring Onion, finely chopped
Handful Cilantro, finely chopped
1 large Lime
1 pickled Jalapeno, finely chopped (Optional)
Salt to taste

Method:

1) Cut the avocadoes longitudinally right through the center of seed and separate the two parts. Remove seeds and keep one seed aside for later use.

2) Cut the fruit in small squares without cutting the skin. Scoop out the velvety fruit and put it all in one big mixing bowl.

3) With a fork, start mashing the small pieces so that is quite a bit mashed up with some small chucks in between.

4) Add the chopped spring onions, cilantro, jalapeno and salt and mix well.

5) If serving immediately, add lime juice and mix it too. Otherwise, add the reserved avocado seed in the center and cover it with guacamole. Just spread the lime juice on top layer of guacamole and cover with cling wrap right on it. It helps with delaying the process of the top layer getting brown. Mix before serving.
