Fried Rice is the easiest dish to make as you can throw in any vegetables and few sauces and you are good to go, and you can make it from left over rice too. Easy to make still as delicious. You can pair the rice with Vegetable Manchurian or any other Chinese gravy dish, or soups such as Veg corn soup, hot and sour soup.
This recipe is contributed by a great cook, my cooking guru and my neighbor Surekhaji. She is a fantastic cook. A few days ago, we had Chinese meal at her house and she made fried rice, hot and sour soup and Thai spring rolls, and I made Vegetable Manchurian. I will post Hot and Sour soup and Spring Rolls recipes soon.

Ingredients:
1 Cup Basmati/Jasmine rice
1 Cup Cabbage, shredded
1/4 Cup Peas
1/4 Cup Corn
1/4 Cup Chopped Carrots
1/4 Cup Chopped Green Beans
1/2 Cup Scallions
1 Stalk Celery, Chopped
1 Tbsp Grated Ginger
1 Tbsp Minced Garlic
1 Tbsp Oil
2 Tbsp Soy Sauce
1 Tsp Hot Sauce
1 Tbsp Vinegar
Salt to taste
Method:
1. Wash the rice and boil them with 5 cups of water.
2. When rice is cooked put the rice in colander to drain off excess water and run cold water through it so cooking process stops.
3. While the rice in cooking, chop all the vegetables.
4. Heat oil in a wok and add ginger and garlic.
5. Saute for a minute and add celery, carrots, green beans, corn and peas and sauté for few more minutes.
6. Add cabbage, scallions, soy sauce, hot sauce and salt.
7. Add cooked rice and vinegar and mix well.
