Most of the people love pancakes. We have a IHOP very close to our home and my son consistently requests to go there for their yummy pancakes. Our favorite on the menu is the Grain n Nut Harvest pancakes. It has that earthy, nutty flavor that makes it special. So, I took up the challenge of recreating them at home. I have used pretty healthy ingredients and they do taste the same as IHOP's. So, give it a try.

Ingredients:
3/4 cup instant oats
3/4 cup wheat flour
1/2 cup bran (wheat or oat)
1/2 cup all purpose flour
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1n 1/2 cups thick buttermilk from Greek yogurt
1 cup water
2 extra large eggs (Use 1 whole egg and just the egg white of another)
1 tsp vanilla extract
1/3 cup and 2 tbsp sugar
1/4 cup neutral oil/butter/half of each (I did this option)
Chopped nuts ( I used almond and walnut but pecans would taste yum too)
3/4 cup wheat flour

1/2 tsp salt
1 tsp baking soda
1 tsp baking powder

Method:
1) Grind the instant oats so that it is fine flour
2) Mix all the flours, baking soda, baking powder, salt with spatula
3) In another bowl, mix rest of ingredients and beat/ mix till sugar dissolves.
4) Add slowly the wet mixture to flour mix
5) Add more water if batter is too thick and make it of pancake consistency
6) Add nuts. Mix well. Cook
7) Enjoy with your favorite toppings and syrup
Suggestions:
Adjust the quantity of water to make the batter of pancake consistency.
